結構大きな金目ダイです。
今日は火を通した金目ダイに冷たいラビゴットソース添え料理です。
あまった頭や骨はミルポワと一緒に煮てダシを取ってソースになります。
自分的には醤油と酒、みりんと生姜を入れて煮付けにして、骨の間から身をすすって食べるのが一番かな。
